Chubby of Yummy Chow had it right. These are cocoa nibs. I used a macro lens on my camera to get that almost larger-than-life shot of the nibs. After the cocoa beans are cleaned, roasted and hulled, the bits that are removed from the shell are the cocoa nibs. They're unsweetened and somewhat bitter. I especially like the crunch and bitter notes of nibs embedded in good dark chocolate.
