"Impossible" pies are just one of those wonderfully simple and fun desserts. The bisquick sinks to the bottom to make a soft crust, and the eggs, milk, and sugar form a custard base. A variety of different ingredients — e.g. apples, chocolate, coconut — can be added to make a host of different pies.
Impossible French Apple Pie
Pie Filling:
6 cups tart apples, peeled and sliced
1 1/4 tsp cinnamon
1/4 tsp nutmeg
3/4 cup milk
2 Tbs butter, softened
2 eggs
1/2 cup Bisquick or baking mix
3/4 cup sugar (the original recipe calls for 1 cup, but I thought that was too much)
Streusel:
1 cup Bisquick or baking mix
1/2 cup chopped nuts
1/3 cup brown sugar, packed
3 Tbs butter, cold
Preheat oven to 350 degrees F. Grease a 10" pie plate. Mix apples and cinnamon and nutmeg, and turn into the plate. Beat remaining pie filling ingredients until smooth (15-30 second in a blender or 1-2 minutes by hand). Pour into plate.
Combine streusel ingredients until crumbly. (I find blending the butter, sugar, and bisquick in a processor then adding in the nuts works well.)
Sprinkle the pie with the streusel. Bake until a knife inserted in the center comes our clean. 55-60 minutes or so. Cool before serving so the custard sets.
Your impossible pie looks great :) I keep meaning to make a coconut one and serve it with mango slices....

I've made a coconut one before. The coconut floats to the top of the pie and makes a nice browned coconut top over custard filling. Adding sliced mango to that sounds delicious!

the only apple pie my mom ever made. I DON'T LIKE ANY OTHER! The pumpkin is super as well as the coconut but the coconut one seems a little breakfasty would be great with breakfast coffee and tea.
